Portobello Mushroom Bruschetta Pizza Recipe

Ingredients

  • 2 Tablespoons olive oil - divided
  • 4 Portobello Mushrooms (cleaned and gills removed)
  • 1 Pint grape tomatoes
  • 1/4 Cup of chopped fresh basil - chopped
  • 2 Cloves of chopped garlic
  • 1/4 Cup grated mozzarella cheeseINSTRUCTIONS
  • Coarsely chop tomatoes and place in bowl
  • Add fresh chopped basil,garlic and olive oil and set aside
  • Spread olive oil on a grill or grill pan and heat
  • Place portobellos on the grill (pan) gill side up and grill for approximately 8-10 minutes
  • Turn over and grill for 5 minutes more -- until mushrooms begin to soften
  • Fill the mushrooms with tomato mixture and top with mozarella cheese
  • Place under broiler until cheese melts
