Ingredients

  • 2/3 c. white beans dry
  •     salt and pepper to taste
  • 2 lb potatoes cubed
  • 1 lrg Stalk celery sliced
  • 2 x leeks rinsed well/sliced
  • 1/4 lb green beans snapped in pcs
  • 3 slc Bacon blanched
  • 1 lrg Head cabbage cored/finely minced

Directions

  1. Cover dry beans with water and soak overnight. Pour into colander, rinse and drain.
  2. Put beans in 2 qts of water in large pot. Bring to a boil. Cook for 30 min at Low boil.
  3. Add in salt and pepper to taste, potatoes, celery, leeks, green beans and bacon, that has been blanched for 2 min in boiling water. Allow to come to a boil. Reduce heat to Low. Cook for 30 min more.
  4. Add in cabbage during last 10 min of cooking time.
