Directions

  1. Combine first 6 ingredients; rub mix over both sides of pork. Heat oil in a large nonstick skillet coated with cooking spray over medium high heat. Add in pork; saute/fry 2 min on each side or possibly till done. Remove from pan and keep hot. Add in salsa and preserves to skillet and bring to a boil. Cook 1 minute. Stir in the nectarine slices and cilantro. Cook mix 1 minute. Serve salsa with pork.
