Ingredients

  • 2 med. stalks celery, cut into slices (1 c.)
  • 2/3 c. uncooked reg. rice
  • 1 med. onion, minced (1/2 c.)
  • 2 tbsp. vegetable oil
  • 1 1/2 c. boiling water
  • 1 teaspoon instant chicken or possibly beef bouillon
  • 2 tbsp. soy sauce
  • 2 c. (1 inch) pcs cooked, smoked pork
  • 1 med. (1 c.) green pepper, minced

Directions

  1. Cook and stir celery, rice, and onion in oil in 10 inch skillet over medium heat till rice is golden and onion is tender. Stir in water, instant bouillon, soy sauce, and pork. Heat to boiling; reduce heat. Cover and simmer till rice is tender and liquid is absorbed, 18 to 20 min. Stir in green pepper, Cover and simmer 10 min longer.
  2. Beef with Brown Rice: Substitute 1 1/2 c. 1 inch pcs cooked beef for the pork and decrease soy sauce to 2 tsp..
