Ingredients
- 1/2 c. dry apricot
- 1/2 c. prunes
- 1 sm bunch thyme
- 1 c. armagnac
- 2 x 8 ounce thick pork, loin, chops
- 1 Tbsp. extra virgin olive oil
- 1 x salt and pepper
Directions
- Preheat oven to 350 degrees Fahrenheit
- Cut the apricots and prunes into small pcs. Place in a bowl with the armagnac. Remove the thyme leaves from their stalks and add in to the fruit mix. Allow to marinate for at least 1 hour.
- Try to buy quite thick pork chops. Make a horizontal slit along one edge of the chop. Stuff the hole with the fruit and thyme mix. Season the chop with salt and pepper.
- Sear the chops in a pan over a high heat till each side is browned, about 3 min per side. Move to the preheated oven to finish cooking for 10 to 12 min.
