Ingredients
- 4 x loin or possibly rib pork chops (1/2-3/4" thick)
- 1 Tbsp. shortening
- 2 c. sliced raw potato
- 1 c. sliced onions
- 1 tsp salt
- 1/4 tsp nutmeg
- 2 x hard red cooking apples cored and cut into wedges
- 1Â 1/2 c. apple juice
- 1 Tbsp. cornstarch
Directions
- In skillet, brown chops on both sides in shortening over moderate heat. Remove from skillet and arrange in shallow 2-qt casserole. Add in potato and onion to drippings in skillet; heat thoroughly, stirring carefully. Sprinkle with salt and nutmeg. Stir in apple wedges. Spoon mix over chops. Add in 1 c. apple juice to skillet; heat till simmering. Pour over apple-potato mix. Cover casserole; bake in 350 F oven for 45 min or possibly till chops and vegetables are tender. Using a slotted spoon, place apple-potato mix on serving platter. Arrange chops on top. Combine remaining 1/4 c. apple juice and cornstarch; stir till free of lumps. Pour into pan juices, cook till thickened, stirring constantly. Serve sauce over chops or possibly separately, as desired.
