Ingredients
- 1 tablespoon olive oil
- 1 pound boneless pork sirloin chops, trimmed and cut into bite-sized cubes
- 1 onion, diced
- 3-4 cloves garlic, minced
- 1-3 (to taste) canned chipotle chiles in adobo sauce, chopped
- 2 teaspoons cumin
- 2 teaspoons ground coriander
- 2 teaspoons Mexican oregano (crushed)
- 2 tablespoons plus 2-3 cups water, divided
- 2 cups low sodium chicken broth
- 1/4 cup cornmeal
- 1 15-ounce can hominy, rinsed
- kosher salt and black pepper to taste
- juice of one lime
- Suggested garnishes: chopped fresh cilantro, tortilla strips, lime wedges

.%20It's%20called%20pozole,%20and,%20according%20to%20the%20all-knowing%20Wikipedia,%20it's%20a%20traditional%20Mexican%20dish%20made%20with%20cacahuazintle%20corn%20(also%20known%20as%20hominy)%20and%20meat,%20and%20was%20originally%20only%20served%20on%20special%20occasions.%20The%20details%20about%20that%20include%20cannibalism%20so%20we%20won't%20go%20into%20that%20here%20so%20as%20not%20to%20ruin%20your%20appetite.%3C/p%3E%3Cp%3EWe%20were%20inspired%20by%20a%20variety%20of%20recipes%20we%20found%20online%20and%20made%20ours%20with%20pork.%20We%20weren't%20sure%20if%20we%20could%20find%20hominy,%20but%20we%20did%20find%20canned%20hominy%20in%20the%20Goya%20section%20at%20our%20usual%20grocery%20store,%20which,%20we%20are%20thrilled%20to%20say,%20seems%20to%20be%20stocking%20a%20much%20wider%20variety%20of%20products%20as%20of%20late.%20We%20had%20a%20can%20of%20chipotle%20peppers%20in%20adobo%20sauce%20in%20the%20pantry,%20and%20we%20used%20three%20of%20them%20to%20flavor%20the%20broth,%20and%20then%20decided%20next%20time%20we%20will%20only%20use%20two.%20Or%20maybe%20one.%20It%20was%20pretty%20spicy,%20so%20be%20forewarned.%3C/p%3E%3Cp%3EOther%20than%20that,%20we%20were%20delighted%20by%20the%20various%20flavors%20and%20textures%20in%20the%20stew,%20as%20we%20were%20with%20the%20easiness%20of%20making%20it.%20And%20as%20suspicious%20as%20that%20tin%20of%20Mexican%20oregano%20may%20look,%20it%20really%20is%20Mexican%20oregano%20and%20we%20suggest%20looking%20for%20it%20if%20you%20plan%20to%20make%20this%20spicy,%20zesty%20dish,%20because%20it%20really%20gave%20it%20an%20interesting%20flavor.%3C/p%3E%3Cp%3EPork%20and%20Chipotle%20Pozole%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20large%20stockpot%20over%20medium%20heat.%20Add%20the%20pork%20and%20brown%20on%20all%20sides.%20Remove%20from%20pot%20and%20set%20aside.%20Add%20onions,%20garlic,%20chipotles,%20cumin,%20coriander%20and%20oregano%20and%202%20tablespoons%20of%20water.%20Stir%20up%20all%20the%20browned%20bits%20from%20the%20pork,%20and%20cook%20until%20onion%20starts%20to%20brown,%20about%205%20minutes,%20stirring%20occasionally.%20Add%202%20of%20the%20remaining%203%20cups%20of%20water,%20chicken%20broth,%20then%20whisk%20in%20the%20cornmeal.%20Simmer%20over%20medium%20heat,%20stirring%20often.%20Add%20hominy,%20then%20season%20with%20salt%20and%20pepper%20to%20taste.%20If%20you%20want%20to%20add%20the%20remaining%201%20cup%20of%20water,%20depending%20on%20taste%20and%20consistency,%20do%20so%20here.%20Continue%20to%20simmer%20until%20mixture%20begins%20to%20thicken,%20about%205%20minutes.%20Return%20pork%20to%20the%20pot%20and%20add%20lime%20juice.%20Cook%20until%20pork%20is%20warmed%20through,%20about%205%20additional%20minutes.%20Serve%20in%20bowls%20and%20garnish%20each%20serving%20with%20cilantro,%20tortilla%20strips%20and%20a%20wedge%20of%20lime%20(also%20a%20glass%20of%20water%20if%20you%20used%203%20of%20the%20chipotles!)%3C/p%3E){kind=link}
