Pork and Beans Chili

This chili is quick and easy and has a sweet and yet spicy flavor.

Ingredients

  • 1 cup rice
  • Dash of turmeric
  • Chili Ingredients:
  • 4 medium tomatoes – chopped
  • 1 medium Jalapeño – chopped with seeds
  • 1 medium onion – chopped
  • 2 stalks celery – chopped
  • 2 carrots – chopped
  • 3 cloves garlic - crushed & chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire
  • 1 tablespoon dried oregano
  • 2 tablespoons chili powder
  • 2 tablespoons Paprika
  • ½ tsp black pepper
  • 1 – 28 oz. can Baked Beans with bacon and brown sugar
  • 1 cup chicken broth
  • Olive oil

Directions

  1. In a medium sauce pan drizzle about 2 tablespoons olive oil and add onion, carrot, tomato, garlic, celery and jalapeño and sauté until the onion turns clear.
  2. Add the chicken broth and continue to simmer on low for about 5 minutes. Add the spices and continue to simmer on low.
  3. Add the Baked Beans and once again continue to simmer on low.
  4. Prepare the rice - add a dash of turmeric to the water to give the rice a golden color.
