Ingredients

  • 4 x Chicken breasts, (4 ounce ea)
  • 4 1/2 ounce Sliced Proscuitto Ham
  • 4 1/2 ounce Sliced Mozzarella cheese
  •     Sage to season breasts
  • 1 ounce Extra virgin olive oil to sautee breast
  • 4 ounce Marsala wine
  • 4 ounce Softened butter
  • 1 tsp Minced onion
  • 1/2 x Lemon juice
  • 1 tsp Chef's salt to season
  •     Flour - sufficient to dust chicken breast before sauteeing.

Directions

  1. Slice breast open and season with sage. Fold Proscuitto ham around mozzarella cheese and stuff into chicken breast. Saute/fry breast in extra virgin olive oil over medium heat till breast reaches 165 degrees F. Remove breast to hot place (oven). Add in minced onion, Marsala wine, seasoning salt, and lemon.
  2. Reduce wine by 1/2 and swirl in softened butter to create sauce. Serve sauce over chicken breast.
