Directions

  1. Brown sausage and onion in oil over medium heat. Add in tomatoes and seasonings. Simmer 1 hour, stirring occasionally. Bring 1 1/2 qts of salted water to a boil. Add in cornmeal slowly into water, stirring constantly, to prevent lumping.
  2. Cook over low heat till cornmeal leaves sides of pan. Remove from heat. Add in 1/2 c. cheese. Place half of the cornmeal on large platter. Pour 1/2 of sausage mix over cornmeal. Sprinkle remaining cheese. Repeat layers and serve at once.
