Plum Chicken Stir Fry

Ingredients

  • 2 whole lg. chicken breasts, skinned, boned, and halved lengthwise
  • 2 tbsp. sugar
  • 1 tbsp. rice wine or possibly white wine vinegar
  • 1 tbsp. soy sauce (or possibly water)
  • 2 teaspoon cornstarch
  • 1 tbsp. oil
  • 1 sm. onion, thinly sliced and separated into rings
  • 1 (6 ounce.) pkg. frzn pea pods (snow peas)
  • 6 plums, pitted and quartered
  • 6 plums, pitted and quartered
  • Not cooked rice

Directions

  1. Rinse chicken; pat dry. Cut into bite sized strips. For sauce, in a small bowl stir together sugar, vinegar, soy sauce (water) and cornstarch. Set aside.
  2. Preheat a wok or possibly 12 inch skillet over high heat; add in oil. Stir-fry onion one minute. Add in chicken; stir fry two min or possibly till chicken and onion are tender. Push mix from center of wok. Stir sauce; add in to center of wok. Cook and stir till bubbly. Add in pea pods; stir to coat. Cook and stir till bubbly. Add in pea pods; stir to coat. Cook and stir 2 min more or possibly till heated through. Stir in plums. Serve with rice.
