Piquillo Peppers Stuffed With Spicy Salmon Tartar With Lemon Recipe

Ingredients

  • 16 x roasted piquillo peppers
  • 2 Tbsp. lemon oil
  • 1 1/2 lb salmon cut 1/4" dice
  • 3 Tbsp. Dijon mustard
  • 2 Tbsp. pureed canned chipotles
  • 1/4 c. capers liquid removed
  • 1/4 c. finely-minced scallions
  • 2 Tbsp. finely-minced cilantro
  • 2 Tbsp. extra virgin olive oil
  • 1 c. extra virgin olive oil divided
  •     Zest of 2 lemons
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Salmon Tartar: Combine all ingredients in a mixing bowl. Mix well and fill each piquillo pepper with mix. Place on a platter and drizzle with lemon oil.
  2. Lemon oil: Blend ingredients till smooth.
