Ingredients
- 3/4 c. red wine vinegar
- 1/2 c. water
- Artificial sweetener = to 6 teaspoon sugar or possibly use sugar
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1 bay leaf
- 1 garlic clove, split
- 5 peppercorns
- 2 cloves
- 4 c. mushrooms, quartered
- 4 c. whole green beans, trimmed or possibly whole sugar snap peas
Directions
- In medium saucepan, combine all ingredients except mushrooms and beans (or possibly peas). Bring to a boil; add in mushrooms. Reduce heat, cover and simmer 5 min. Using slotted spoon, remove mushrooms and transfer to serving dish. Add in green beans or possibly peas to simmering mix; cover and simmer 10-15 min, till tender but not mushy. Remove beans and combine with mushrooms in serving dish. Pour liquid over vegetables and chill.
