Ingredients
- 1 c. hot unseasoned mashed potatoes
- 1/2 teaspoon salt
- 2 teaspoon vanilla
- 2 pound sifted powdered sugar
Directions
- Combine potatoes, salt, and vanilla in a 4 qt mixing bowl. Sift powdered sugar over potatoes stirring and adding sugar 1 c. at a time. When it becomes the consistency of stiff dough, knead till you can roll it out on wax paper. When it is rolled out, spread peanut butter over the candy. Then roll up like jelly roll. Wrap in Saran paper and refrigeratetill you can slice in small slices. Wrap in Saran Wrap and store in airtight container.
