  • 1 pound pinto beans (soaked overnight, directions here:)
  • 2 tablespoons olive oil
  • 1 large sweet onion, sliced
  • 4 cloves garlic, minced
  • salt to taste
  • 1/2 teaspoon fresh ground pepper
  • 2 meaty smoked ham hocks
  • 7 cups water or stock (chicken or pork)
  • 1/4 teaspoon garlic powder, or to taste
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon ground cumin
