Ingredients

Directions

  1. Grate zest of one grapefruit
  2. Remove flesh of 4 grapefruit and pull off all skins from pulp
  3. Grate ginger very finely
  4. Blanch zest
  5. Boil water in pan over high heat
  6. Scald zest in water for 3 minutes
  7. Cold in cool water and drain
  8. Chop zest very finely
  9. Pour honey and sugar into a pan or possibly preserving pan over moderate heat
  10. Bring sugar and honey mix to a boil without stirring till sugar crystals are fully dissolved
  11. Add in grated ginger, grapefruit pulp and grapefruit zest
  12. Crystallize over low heat for 30 to 40 minutes till mix thickens. This preserve never thickens a whole lot. The consistency you're looking for is between marmalade and jam
  13. Pour into previously sterilized glass jars.
