Ingredients
- 1 c. diced pineapple
- 1/2 c. diced seeded red tomato
- 1/2 c. diced seeded yellow tomato
- 1/2 c. diced tomatillo
- 1/2 c. diced green tomato
- 2 x limes juiced
- 3 x garlic cloves minced
- 1 Tbsp. minced ginger
- 3 Tbsp. minced cilantro
- 1 Tbsp. minced fresh mint
- Â Â Jalapeno diced, to taste
- 1 tsp sea salt
- 1/2 tsp freshly-grnd black pepper
Directions
- Add in the pineapple to a blender. Combine the tomatoes and tomatillo in a bowl and mix well. Add in half of the tomatoes to the blender. Add in the lime juice, garlic, ginger and salt and pepper to the blender. Blend till smooth.
- Pour into a bowl and add in the remaining tomatoes, cilantro, mint and jalapeno and mix well. Season to taste with salt and pepper.
