Ingredients

  • 1 c. diced pineapple
  • 1/2 c. diced seeded red tomato
  • 1/2 c. diced seeded yellow tomato
  • 1/2 c. diced tomatillo
  • 1/2 c. diced green tomato
  • 2 x limes juiced
  • 3 x garlic cloves minced
  • 1 Tbsp. minced ginger
  • 3 Tbsp. minced cilantro
  • 1 Tbsp. minced fresh mint
  •     Jalapeno diced, to taste
  • 1 tsp sea salt
  • 1/2 tsp freshly-grnd black pepper

Directions

  1. Add in the pineapple to a blender. Combine the tomatoes and tomatillo in a bowl and mix well. Add in half of the tomatoes to the blender. Add in the lime juice, garlic, ginger and salt and pepper to the blender. Blend till smooth.
  2. Pour into a bowl and add in the remaining tomatoes, cilantro, mint and jalapeno and mix well. Season to taste with salt and pepper.
