  • 8 med. sweet potatoes, cooked and mashed
  • 4 tbsp. butter
  • Grated rind of 1 lemon
  • 1/2 teaspoon salt
  • 1 (16 ounce.) can crushed pineapple, liquid removed - reserved 1 c. syrup
  • 1 c. heavy cream

Directions

  1. Put sweet potatoes in large bowl; add in butter, lemon rind, salt, the c. of reserved pineapple syrup and cream. Mix together and place in buttered casserole. Top with crushed pineapple.
  2. Bake in warm 450 degree oven for 15 min.
