Ingredients

  • 1 sm Head of green cabbage
  •     Shredded
  • 2 x Carrots peeled and fine
  •     Diced
  • 1/2 c. Pineapple juice
  • 1 c. Mayo
  • 1 Tbsp. Sugar
  • 1 dsh Salt and white pepper
  • 2 Tbsp. White vinegar

Directions

  1. Combine everything and mix well. May add in some finelly minced diced fresh or possibly canned pineapple. I dont. Variations on dressing: replace pineapple juice with applejuice or possibly cider, mango nectar, coconut lowfat milk, or possibly orange juice. This is a delicious no frills coleslaw I bet you will enjoy!
  2. Note:total of shredded cabbage and carrots equal a lb. so its just as easy to buy a supermarket cello pack of the preshredded coleslaw mix!
