Ingredients

  • 2.5 pounds Idaho® russet potatoes, peeled and sliced into thick fries
  • 1 TBS olive oil + 2 tsp., divided
  • salt and pepper, to taste
  • 1 lb. flat iron steak, sliced thinly
  • 1/2 tsp. garlic powder
  • 1/2 large green bell pepper, sliced
  • 1/2 large red bell pepper, sliced
  • 1 cup sliced onion
  • 4 TBS unsalted butter
  • 3 TBS all purpose flour
  • 1 1/2 cups reduced fat milk
  • 1/4 tsp. powdered mustard
  • 6 oz. provolone cheese, shredded (or slices torn into pieces)
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup fresh mozzarella pearls (or shredded mozzarella, if you can't find the pearls)
