%20favourite%20thing%20to%20eat%20%E2%80%93%20pizza!%20So%20I%20apologise%20for%20the%20obscene%20amount%20of%20photos%20in%20this%20post.%20I%20got%20a%20bit%20carried%20away%20%E2%80%93%20it%E2%80%99s%20just%20impossible%20to%20make%20pizza%20look%20ugly.%20As%20long%20as%20you%E2%80%99ve%20got%20a%20nice%20crispy%20base%20and%20plenty%20of%20cheese,%20you%E2%80%99re%20on%20to%20a%20winner.%3C/p%3E%3Cp%3ESpeaking%20of%20pizza%20bases:%20are%20you%20a%20base%20person,%20or%20a%20topping%20person?%20I%20know%20some%20people%20like%20a%20nice%20thick%20base,%20but%20personally%20I%E2%80%99m%20definitely%20more%20into%20the%20toppings.%20In%20my%20opinion,%20the%20base%20is%20only%20there%20to%20hold%20all%20the%20toppings%20together%20(kind%20of%20like%20how%20a%20tortilla%20chip%20exists%20for%20the%20sole%20purpose%20of%20getting%20guacamole%20up%20to%20mouth%20level).%20That%E2%80%99s%20why%20I%20decided%20to%20go%20for%20tortilla%20pizza%20this%20time%20%E2%80%93%20just%20use%20a%20thin%20flour%20tortilla%20instead%20of%20your%20usual%20pizza%20base.%20It%E2%80%99s%20easy,%20it%E2%80%99s%20fast,%20and%20there%E2%80%99s%20no%20faffing%20with%20a%20rolling%20pin%20or%20floured%20surfaces.%20Add%20your%20toppings,%20and%20boom.%20You%20have%20a%20pizza.%3C/p%3E%3Cp%3EThe%20tomato%20sauce%20is%20always%20my%20least%20favourite%20part%20of%20a%20pizza,%20so%20this%20time%20I%20went%20for%20pesto%20instead.%20Again,%20it%E2%80%99s%20super%20quick%20and%20easy%20%E2%80%93%20I%20didn%E2%80%99t%20even%20make%20my%20own%20pesto,%20although%20you%20definitely%20could.%20The%20whole%20thing%20was%20in%20the%20oven%20in%20about%20five%20minutes,%20and%20was%20just%20as%20satisfying%20to%20eat%20as%20one%20of%20those%20ridiculously%20expensive%20pizzas%20you%20get%20from%20a%20take%20away%20place%20(it%20kind%20of%20pains%20me%20to%20say%20that%20since%20I%20love%20those%20things,%20but%20it%E2%80%99s%20actually%20completely%20true).%3C/p%3E%3Cp%3EI%20guess%20the%20flavours%20of%20this%20tortilla%20pizza%20are%20reminiscent%20of%20a%20caprese%20salad%20%E2%80%93%20mozzarella,%20tomatoes%20and%20basil.%20However%20this%20pizza%20has%20the%20added%20advantage%20of%20a%20few%20good%20dollops%20of%20ricotta,%20which%20totally%20take%20it%20to%20the%20next%20level.%20There%20is%20honestly%20nothing%20better%20than%20the%20combination%20of%20fragrant%20basil%20pesto%20with%20that%20mild,%20creamy%20ricotta,%20plus%20some%20sweet%20roasted%20cherry%20tomatoes%E2%80%A6%20it%E2%80%99s%20hard%20to%20believe%20that%20something%20that%20takes%20just%20five%20minutes%20to%20put%20together%20could%20really%20taste%20this%20good,%20but%20it%20really%20really%20does.%3C/p%3E%3Cp%3EPesto%20and%20ricotta%20tortilla%20pizza%3C/p%3E%3Cp%3EAuthor:%20Becca%20@%20Amuse%20Your%20Bouche%3C/p%3E%3Cp%3ERecipe%20type:%20Main%20meal%3C/p%3E%3Cp%3EServes:%201-2%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ETo%20serve:%20fresh%20herbs%20(optional)%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20190%C2%B0C%20(Gas%20Mark%205%20/%20375%C2%B0F).%3C/p%3E%3Cp%3ESpread%20the%20pesto%20evenly%20across%20the%20tortilla,%20and%20sprinkle%20over%20the%20grated%20cheese.%20Add%20a%20few%20dollops%20of%20ricotta,%20and%20the%20halved%20cherry%20tomatoes.%20Season%20with%20a%20little%20salt%20and%20plenty%20of%20black%20pepper,%20and%20bake%20for%2030%20minutes,%20or%20until%20the%20cheese%20is%20golden%20brown%20and%20crispy.%3C/p%3E%3Cp%3EServe%20topped%20with%20fresh%20herbs%20if%20desired.%3C/p%3E%3Cp%3E3.2.2310%3C/p%3E%3Cp%3EFor%20another%20easy%20but%20delicious%20pizza%20recipe,%20try%20my%20lentil%20pizza:%3C/p%3E){kind=link}
