%20celebrated%20my%20nieces%20birthday%20and%20I%20got%20to%3C/p%3E%3Cp%3Etake%20my%20grands%20to%20Scheels.%20%20I%20had%20no%20idea%20what%20Scheels%20was...and%20when%20I%3C/p%3E%3Cp%3Ewas%20told%20it's%20a%20giant%20sporting%20goods%20store,%20my%20heart%20didn't%20skip%20a%20beat%20-%20until%20I%20saw%20it%20in%20person.%3C/p%3E%3Cp%3EThis%20is%20a%20sporting%20goods%20store%20on%20steroids...with%20bats,%20balls,%20kayaks,%20guns,%20dead%20animals%20on%20the%20walls%20and%20a%20giant%20ferris%20wheel%20inside.%20%20Max%20was%20so,%20so%20happy%20-%20he%20could%20hardly%20wait%20for%20his%20turn%20to%20ride!%3C/p%3E%3Cp%3EMax%20loved%20Scheels%20-%20he%20happily%20posed%20at%20all%20of%20the%20photo-op-spots%20-%20and%20little%20Elsa%20was%20very%20content%20to%20be%20pushed%20around%20in%20their%20car-carts.%3C/p%3E%3Cp%3EIF%20you%20live%20in%20or%20near%20Sandy,%20Utah,%20get%20yourself%20over%20to%20Scheels%20for%20a%20good%20time...but%20don't%20go%20on%20a%20weekend!%20%20Oh,%20they%20also%20have%20an%20aquarium%20inside%20that%20you%20walk%20under%20and%20a%20restaurant%20with%20a%20fudge%20shop!%3C/p%3E%3Cp%3EWe%20woke%20up%20to%205-inches%20of%20snow%20on%20the%20ground%20this%20morning...before%20Halloween!%20%20Mom's%20cosmos%20were%20still%20blooming%20and%20so%20were%20her%20roses!%20%20It%20was%20a%20great%20day%20to%20stay%20inside%20and%20make%20Persimmon%20Jam!%3C/p%3E%3Cp%3EThe%20day%20before,%20Mom%20and%20I%20went%20to%20Ocean%20Mart%20(90th%20South%20and%20115%20East)%20and%20we%20bought%20all%20kinds%20of%20fruit%20and%20veggies.%20%20Ocean%20Mart%20is%20an%20Asian%20grocery%20store%20and%20like%20most%20ethnic%20stores,%20it's%20filled%20with%20different%20types%20of%20foods%20-%20some%20we%20knew,%20some%20we%20didn't.%20%20When%20I%20saw%20the%20mountain%20of%20persimmons%20I%20just%20had%20to%20buy%20some...they%20are%20so%20pretty!%20%20I%20had%20not%20eaten%20a%20persimmon%20before,%20and%20I%20was%20more%20than%20curious!%20%20I%20asked%20a%20clerk%20in%20the%20store%20about%20them,%20she%20said%20they%20are%20in%20season%20now,%20and%20they%20make%20great%20salsa,%20chopped%20with%20cilantro%20and%20onion%20and%20they%20make%20great%20pudding%20(!)%20and,%20like%20music%20to%20my%20ears...they%20make%20great%20jam.%20%20I%20am%20a%20jam%20eater...and%20now%20I'm%20a%20persimmon%20jam%20eater!%20%20It%20couldn't%20have%20been%20easier.%20%20But%20that's%20not%20why%20you%20should%20make%20persimmon%20jam...you%20should%20make%20it%20because%20it's%20dang%20good!%20%20It%20reminds%20me%20of%20orange%20marmalade...only%20mellow-er.%3C/p%3E%3Cp%3EPersimmons%20have%20the%20feel%20of%20a%20tomato,%20except%20they%20don't%20have%20seeds%20inside%20(I%20bought%20Fuyu%20persimmons,%20they%20are%20seedless)%20and%20they%20kind%20of%20taste%20like%20an%20apple,%20except%20they%20are%20not%20as%20tasty.%20%20It's%20kind%20of%20hard%20to%20describe%20their%20taste...I%20was%20told%20they%20have%20an%20astringent%20taste,%20but%20I%20wouldn't%20say%20that,%20they%20were%20almost%20bland...but%20once%20cooked%20with%20sugar,%20orange%20and%20lemon%20zest,%20the%20persimmon%20pulp%20becomes%20soft%20and%20sweet%20-%20and%20spoonably%20delicious!%3C/p%3E%3Cp%3E(**You%20will%20need%202%20cups%20sugar%20for%20every%203%20cups%20of%20pulp.%20%20I%20was%20able%20to%20get%206%20cups%20of%20pulp%20from%20the%2012%20persimmons%20so%20I%20used%204%20cups%20of%20sugar.%20%20You%20will%20have%20to%20do%20the%20math%20and%20adjust%20the%20sugar%20for%20the%20amount%20of%20pulp%20you%20get.)%3C/p%3E%3Cp%3ERemove%20the%20very%20stiff%20leaves%20from%20the%20tops%20of%20the%20persimmons.%20%20Core%20the%20persimmons,%20just%20slightly,%20then%20cut%20into%20quarters%20and%20peel%20using%20a%20paring%20knife.%20%20Put%20all%20persimmon%20pieces%20in%20a%20food%20processor%20and%20process%20until%20just%20very%20small%20bits%20are%20left.%20%20In%20a%20large%20saucepan%20over%20medium%20high%20heat,%20combine%20%206%20cups%20persimmon%20pulp%20with%20the%20sugar,%20orange%20and%20lemon%20zest.%20%20Stir%20mixture%20and%20bring%20to%20a%20boil.%20%20Stirring%20frequently,%20and%20making%20sure%20mixture%20doesn't%20boil%20over,%20continue%20to%20cook%20until%20mixture%20has%20thickened,%20about%2020%20to%2030%20minutes.%20%20(Use%20the%20freezer%20plate%20method%20to%20determine%20if%20jam%20has%20reached%20its%20set%20point:%20%20put%20a%20small%20ceramic%20plate%20in%20the%20freezer%20for%2010%20minutes.%20%20Remove%20and%20put%20one%20teaspoon%20of%20hot%20jam%20onto%20plate.%20%20Return%20plate%20to%20refrigerator%20for%205%20more%20minutes.%20%20After%205%20minutes,%20remove%20plate%20and%20push%20finger%20through%20jam,%20if%20jam%20wrinkles%20up%20and%20holds%20its%20shape,%20then%20it's%20ready.%20%20If%20not,%20keep%20cooking%20and%20check%20every%20five%20minutes.)%3C/p%3E%3Cp%3EWhen%20jam%20is%20done,%20remove%20from%20heat%20and%20stir%20in%20lemon%20juice.%20%20Ladle%20into%20hot,%20sterilized%20jars,%20put%20on%20lids.%20%20You%20can%20process%20jam%20in%20a%20hot%20water%20bath%20for%2010%20minutes%20or%20skip%20that%20step%20(like%20we%20did)%20and%20keep%20in%20refrigerator%20for%20up%20to%203%20weeks.%20%20Use%20persimmon%20jam%20on%20toast,%20muffins%20or%20crumpets%20and%20it%20would%20make%20an%20excellent%20glaze%20for%20roasted%20chicken!%20%20Makes%207%20cups.%3C/p%3E){kind=link}
