Persian Maast-o-Khiar Recipe

This is a great tasting and healthy dip that works well with absolutely anything. Put it on rice, kabobs, etc. or just eat it with bread, chips, or by itself. Really refreshing and light!

Ingredients

  • 1/2 container of non-fat plain yogurt (about 16 oz)
  • 3-4 Persian cucumbers (depends on how much crunch you want)--you can also use English cucumbers but the sizes vary so adjust amount accordingly
  • salt & pepper to taste
  • Also if you want experiment with these extra ingredients which I personally love:
  • 1/3 cup walnuts (again add as much as you want)
  • 1/3 cup raisins (same as walnuts--as much as you want in there)
  • 1 Tablespoon dried mint

Directions

  1. put 3 cups of non-fat yogurt into a bowl
  2. wash & peel cucumbers and dice into small cubes
  3. add cucumbers to yogurt and mix in
  4. add salt and pepper to taste
  5. Also:
  6. break up walnuts into smaller pieces using your hands and add to mixture
  7. add raisins and mix in
  8. put Tbs. of dried mint into palm, separate leaves from tiny sprigs (discard the sharp sprigs), add to mixture and mix in

    this is how my grandmother always made maast-o-khiar, it's not the most traditional way to make it but I think it's tastier than just yogurt and cucumbers by themselves. The walnuts give it an extra crunch.
    I've cooked/tasted this recipe!

      I love this salad, very refreshing, sometimes, I add just a bit of fresh garlic. Probably not too authentic then. =)
