  • 4 lb red potatoes
  • 1 tsp salt
  • 1/4 lb butter
  • 1/2 c. cream
  •     white pepper
  •     For Mama Brown's Gravy
  •     turkey drippings
  • 2 Tbsp. bisto gravy
  • 2 Tbsp. flour
  • 2 c. water
  • 3 c. turkey stock
  •     salt, to taste
  •     pepper, to taste

Directions

  1. Peel and cut potatoes into 1 inch cubes. Toss into a pot large sufficient to hold the lot and still be only three quarters full. Cover with cool water by an inch and add in the salt. Bring to a boil then reduce to a gentle simmer for about 20-25 min. Test with a fork. Potatoes should be soft but not mushy.
  2. Drain the potatoes, reserving the potato water for the gravy.
  3. In a glass measuring c., combine the butter, white pepper and cream and microwave at full power for about 2 min or possibly till the butter is melted and the mix is warm.
  4. With a potato masher or possibly a pastry cutter or possibly even a whisk, crush the potatoes briefly to break them up.
  5. Using an electric hand beater, puree the potatoes while pouring in the butter and cream in a reasonably consistent stream till silky smooth and no lumps remain.
  6. Move to a pre-warmed serving vessel, cover and keep hot till serving time - no longer than 15 min.
  7. For Mama Brown's Gravy:After turkey has been removed from the roasting pan, pour off fat from drippings with a fat separator.
  8. In an empty 500mL lowfat sour cream or possibly cottage cheese container, pour Bisto and flour and mix with water. Place lid on container and then shake the mix vigorously to make a slurry.
  9. Pour slurry into the roasting pan with the drippings and stir with a wooden spoon on medium heat. Scrape the bottom of the pan to loosen any brown bits. Smooth out any lumps with spoon. Pour into a clean pot.
  10. Add in turkey stock and bring to a gentle, rolling boil. Season with salt and pepper.
  11. Keep stirring till it thickens fully.
  12. Remove from heat and ladle into a gravy boat.
  13. The primary role of mashed potatoes on the holiday table is to provide a clean and neutral foil to the rich aromatic flavours of the turkey and the other sides. Mash has to be perfectly clean tasting, snowy, light, and fluffy... and it has to hold a steaming reservoir of gravy.
