Pepperoni Stuffing For Cornish Hen Recipe

Ingredients

4 ounce. firmly minced pepperoni 1/4 c. apple cider or possibly juice 4 slices toasted raisin bread, cubed 1/4 teaspoon salt

1/4 teaspoon nutmeg 1 med. apple, minced 2 tbsp. butter, melted

Directions

1. In a saucepan, simmer pepperoni in apple cider; 20 min, covered. Drain reserving 1 Tbsp. of juice. In a bowl, combine bread crumbs, salt and nutmeg. Add in pepperoni and apple. Sprinkle with reserved juice and melted butter. Toss lightly to mix.
