Pennsylvania Dutch Hot Potato Salad

Ingredients

  • 3-4 potatoes
  • 1 egg
  • 2-4 tbsp. vinegar (to taste)
  • 4 tbsp. water
  • 2-4 tbsp. sugar (to taste)
  • bacon
  • onion
  • salt & pepper

Directions

  1. Cube potatoes while warm. Fry bacon till crisp. Drain and break bacon into small pcs.
  2. Mix egg, vinegar, water, sugar and salt and pepper. Pour this mix over bacon and onion in a pan and cook till mix becomes thickened. Stir constantly!!!
  3. Pour over potatoes and garnish with green pepper. Can be used over greens too, just toss. Hard Boiled egg can be sliced on top of all if you like.
