Penne Pasta With Roasted Vegetable Marinara

Ingredients

  • 1 lb Penne pasta
  • 1/4 c. Extra virgin olive oil
  • 1/2 tsp Salt
  • 1/2 x Black pepper
  • 1/4 c. Fresh basil
  • 1/4 c. Fresh oregano
  • 1/4 c. Fresh thyme
  • 3 Tbsp. Minced garlic
  • 1 Tbsp. Sugar
  • 1 x Red pepper, large dice
  • 1 x Green pepper, large dice
  • 1 x Onion, large dice
  • 1 x Portabello mushroom, large dice
  • 1 x Carrot, large dice
  • 1 can Stewed tomatoes

Directions

  1. Preheat oven 425 degrees. Combine all vegetables and toss with salt and pepper and extra virgin olive oil. Roast for approximately 20 min.
  2. Remove from oven. Saute/fry garlic with roasted vegetables for 2 min. Add in stewed tomatoes (don't drain) and sugar. Cook for 2 min. Add in fresh herbs and cook for 1 minute. Add in parmesan cheese (optional).
  3. Toss with cooked pasta. Serve warm.
  4. Makes 4 servings.
