Penne Pasta With Asparagus Recipe

Ingredients

Directions

  1. Heat oil and butter in heavy Dutch oven. Saute/fry asparagus for 3 min.
  2. Transfer asparagus to bowl leaving oil and butter in pans. Add in onions and garlic to pan and saute/fry about 10 min. Add in tomatoes, oregano and red pepper. Bring sauce to a boil, reduce heat and simmer till thickened, stirring occasionally. Return asparagus to sauce and cook till crisp tender. Add in pasta and cheese. Toss to combine. Season with salt and pepper.
  3. Serve with additional cheese.
  4. Yield: 4 servings.
