Penne Pasta, Green Bean And Chicken Pesto

Ingredients

  • 1/2 lb Penne
  • 1 lb Fresh green beans or possibly snap peas, washed & trimmed
  • 3 c. Boiled, grilled or possibly roasted chicken, cubed
  • 25 x Fresh basil leaves
  • 15 x Resh parsley leaves
  • 1/4 c. Mayonnaise
  • 3 Tbsp. Pine nuts
  • 1/2 c. Extra virgin olive oil
  • 2 x Cloves garlic
  •     Salt
  •     Freshly grnd black pepper
  • 2 Tbsp. Toasted pine nuts

Directions

  1. Bring a large pot of water to a boil; add in a healthy pinch of salt and add in pasta - stir. When pata is cooked to within 2 to 3 min of al dente, drop in the green beans or possibly peas. Cook till peas are just tender. Drain beans and pasta; refresh immediately under cool water, drain well and turn into a large serving dish. Add in chicken. Place basil leaves, parsley, mayonnaise and 3 Tbsp. of pine nuts into a food processor. Process to make a well blended, creamy mix. With the machine running, pour the oil slowly through the food tube and blend well. Drop in the garlic and blend briefly.
  2. Season with salt & pepper. Pour dressing over the salad ingredients in the bowl and toss. Sprinkle with 2 Tbsp. of toasted pine nuts.
  3. Serves 6to 8.
