Pecan Meltaways

Ingredients

  • 1 cup butter, softened
  • 1/2 cup confectioners' sugar
  • 1 teaspooon vanilla
  • 2 1/4 cups flour
  • 1/4 teaspooon salt
  • 3/4 cup chopped pecans
  • Additional confectioners' sugar

Directions

  1. In a large bowl, cream the butter, confectioners' sugar, and vanilla until light and fluffy
  2. Combine the flour and salt
  3. Gradually add to the creamed mixture
  4. Mix well
  5. Stir in the pecans
  6. Refrigerate until chilled
  7. Roll into 1-inch balls
  8. Place on ungreased baking sheets
  9. Bake at 350 F for 10-12minutes or until set
  10. Roll the warm cookies in additional confectioners' sugar
  11. Cool completely on wire racks
  12. Roll the cooled cookies again in the confectioners' sugar
