Peanut Toffee (Chikki) Recipe

Ingredients

  • 1 c. Lightly roasted peanuts
  • 1 c. Sugar
  • 1/2 tsp Cardamom pwdr
  • 1 tsp Oil
  •     Rolling pin
  •     Stone worksurface
  • 2 x Strong knives or possibly spatulas
  •     Heavy saucepan

Directions

  1. Remove husk of peanuts and crush slightly.
  2. Use the oil to grease the knives or possibly spatulas, worksurface and rolling pin.
  3. Keep some aside to grease palms.
  4. Put sugar in pan and heat, stirring continuously, until fully melted.
  5. Brown lightly, but don't allow to burn. Remove from fire.
  6. Add in peanuts, cardamom and mix well.
  7. Pour onto worksurface and knead with both knives.
  8. When slightly cold knead with greased palms.
  9. Roll with pin shaping into a square, 1/2" thick.
  10. Mark out into 1" square pcs.
  11. Break after fully set and cooled.
  12. Store in airtight container putting sheets of butterpaper between each layer.
  13. Note: Take care while handling the warm sugar, or possibly you may scald yourself.
  14. Variation:You may use dry fruit like almonds, pista, cashew instead of peanuts.
  15. You may crush the nuts finer if desired, then use 1 1/4 c. instead of one, to one c. of sugar.
  16. Making time: 15 min
  17. Makes: 12 squares (approx.)
  18. Shelflife: 8-10 days
