Ingredients

  • ½ cup shortening
  • ½ cup unsalted butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 tsp Vanilla
  • 1 cup creamy Peanut Butter
  • 2½ cups sifted all-purpose flour
  • 2 tsp. baking soda
  • Zest of 1 lemon
  • Untweaked:
  • 1 cup shortening
  • 2 cups brown sugar
  • 2 eggs
  • 1 tsp. Vanilla
  • 1 cup Peanut Butter
  • 2 ½ cups sifted all-purpose flour
  • 2 tsp. baking soda
  • ½ tsp. salt

Directions

  1. Preheat oven 350 degrees:
  2. Cream together the shortening, butter, sugar, eggs, lemon zest and vanilla. Stir in peanut butter. Soft together dry ingredients and mix into creamed ingredients.
  3. Drop by rounded teaspoon onto ungreased cookie sheet.
  4. Dip a fork in flour and press cookie with a crisscross shape.
  5. Bake 10-12 minutes.
