Peanut Butter Banana Bread

Great bread for breakfast or brunch. Kids will like it, too.

Ingredients

  • 6 T creamy peanut butter
  • 1/4 C (half a stick) butter
  • 1 C sugar
  • 1 tsp. vanilla extract
  • 2 beaten eggs
  • 1 1/2 C AP flour
  • 1 tsp. baking soda
  • 1/8 tsp. salt
  • 1/4 C sour cream
  • 2 ripe, mashed bananas
  • 1/2 C chocolate chips
  • 1/4 C chopped walnuts

Directions

  1. Heat oven to 350 degrees.
  2. Grease a 9x5 loaf pan.
  3. Melt the butter and peanut butter in the microwave (covered) for about a minute, stir well, let cool. Mix in eggs, vanilla, bananas, sour cream, and sugar.,
  4. Sift together dry ingredients, add the chips and nuts, and combine with the wet ingredients.
  5. Stir until barely mixed, pour into pan, spread evenly.
  6. Bake 1 hour, then begin checking for doneness with a toothpick.
  7. Remove from pan and let cool.
