Peanut Butter and Banana Coffee Cake

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup butter, softened
  • 1 1/4 cup white granulated sugar
  • 2 eggs
  • 1 1/2 cup mashed ripe bananas (about 3-4 medium bananas)
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • For the topping:
  • 1/2 cup chopped walnuts
  • 1/2 cup old fashioned rolled oats
  • 3 Tbs light brown sugar
  • 1 tsp ground cinnamon

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl cream together butter and sugar. Beat in vanilla, bananas, and peanut butter. Add eggs, one at a time, beating well after each addition.
  3. Sift together the flour, baking powder, baking soda, and salt. Gradually add the flour mixture to the creamed mixture, stirring only until just combined.
  4. Mix the topping ingredients together and add half to the batter.
  5. Pour batter into a greased 13x9 inch pan, and sprinkle the top with the remaining topping mixture.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack, then cut into slices.
