Peachy Salmon

Wild Salmon was among the delicasies I first learned to appreciate while working in Alaska.
Use any good store-bought peach preserves for this delicious "barbecue" basting sauce. The sweetness of the sauce pairs well and compliments perfectly the rich taste of wild salmon.

Ingredients

  • six 6-8 oz. salmon fillets OR one large 4-6 lb. side-of-salmon
  • 3 T. butter
  • 1 lg. onion sliced thinly
  • 1 T. soy sauce
  • ¼ c. apple cider vinegar
  • 2 c. peach preserves (or 1 large jar)

Directions

  1. In a medium saucepan over medium heat, melt butter then sauté thinly-sliced onions until they slowly begin to brown and caramelize. At this point add the soy sauce, apple cider vinegar and peach preserves. Stir well, melting the preserves, and heat through. Remove from heat and set aside.
  2. Prepare and cook the salmon according to your preferred method- on the grill, in the oven or on stove-top in a non-stick pan. When salmon is nearly finished cooking, baste liberally with spoonfuls of the peach sauce, reserving some also for serving at table alongside the fish.
