Ingredients
- 3 cups AP flourâ¨
- 1 1/2 teaspoons baking powderâ¨
- 1 1/2 teaspoons baking soda
- â¨1 teaspoon salt
- â¨Pinch of nutmeg
- â¨6 ounces vegan butter substitute (I used Earth Balance), at room temperature
- â¨3/4 cup granulated sugarâ¨
- 3/4 cup light brown sugar, packedâ¨
- 2 large eggs, lightly beatenâ¨
- 1 teaspoon vanilla extractâ¨
- 1 1/2 cups almond milk mixed with 1 TBSP of vinegarâ¨
- 3 large peaches, peeled, cored, and chopped smallish
- 1/2 lb goat butter
- 4 cups powdered sugar

%E2%80%A6%20and%20it%20is%2083%20degrees%20outside.%20%20Have%20I%20mentioned%20that%20sometimes%20Seattle%20weather%20drives%20me%20nuts?%20We%20get%20summer%20weather%20in%20the%20fall%20and%E2%80%A6%20rain%20every%20other%20time?%20Whatever,%20I%20still%20love%20you%20Seattle%20and%20no%20matter%20what%20you%20do%20I'm%20still%20not%20budging.%20That%20and%20I%20really%20like%20my%20apartment.%20I%20have%20a%20pretty%20view%20and%20a%20pretty%20rocking%20convection%20oven.%3C/p%3E%3Cp%3ERegretfully,%20it'll%20be%20back%20to%20rain%20come%20Sunday.%20That%20is%20why%20I%20am%20writing%20this%20post%20outside%20and%20drinking%20a%20beer%20(shhh,%20don't%20tell%20anyone%20it's%20not%205%20o'clock%20yet!)%3C/p%3E%3Cp%3EAs%20peach%20season%20was,%20and%20almost%20still%20is,%20in%20full%20swing%20in%20Washington,%20my%20CSA%20box%20was%20loaded%20with%20the%20fuzzy%20fruit.%20So%20much%20so%20that%20I%20really%20couldn't%20eat%20it%20all%20by%20myself.%20%20I%20churned%20it%20into%20ice%20cream,%20baked%20it%20into%20batter%20and%20dutifully%20snacked%20on%20slices%20throughout%20the%20day.%20Still,%20I%20had%20a%20few%20left%20over%20and%20and%20BAM,%20birthday%20cupcakes!%3C/p%3E%3Cp%3EWhen%20my%20dear%20friend,%20Katrina,%20turned%2024%20a%20few%20weeks%20ago%20we%20went%20out%20to%20The%20Saint,%20a%20new-ish%20tequila%20bar%20in%20Capitol%20Hill.%20%20Now%20if%20bringing%20your%20ergonomic%20cupcake%20carrier%20to%20the%20bar%20doesn't%20scream%20%22coolest%20person%20alive,%22%20I%20don't%20know%20what%20will.%20%20Per%20usual,%20I%20topped%20the%20cupcake%20off%20with%20my%20(now)%20signature%20goat%20milk%20buttercream%20but%20I%20could%20have%20never%20anticipated%20how%20well%20the%20flavors%20would%20mesh%20together.%20%20Sweet%20n'%20tangy.%20It's%20kinda%20my%20thing.%3C/p%3E%3Cp%3EIt%20was%20apparently%20everyone%20else's%20thing%20too.%20%20I'm%20not%20usually%20one%20to%20toot%20my%20own%20horn,%20but%20most,%20if%20not%20all,%20of%20my%20friends%20said%20%22these%20[were]%20the%20best%20cupcakes%20I%20have%20ever%20had!%22%20The%20cupcake%20is%20light%20like%20a%20muffin%20but%20slightly%20denser%20like%20cake.%20Of%20course,%20having%20pockets%20of%20peaches%20scattered%20throughout%20the%20batter%20doesn't%20hurt%20either.%3C/p%3E%3Cp%3EPeach%20Cupcakes%20with%20Goat%20Buttercream%3C/p%3E%3Cp%3EAdapted%20from%20Smitten%20Kitchen%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%C2%B0F.%20Line%2028%20muffin%20cups%20with%20paper%20liners.%3C/p%3E%3Cp%3ESift%20together%20the%20flour,%20baking%20powder,%20baking%20soda,%20salt%20and%20nutmeg%20and%20set%20aside.%20Cream%20the%20vegan%20butter%20and%20sugars%20together,%20beating%20until%20fluffy.%20Add%20the%20eggs,%20one%20at%20a%20time,%20scraping%20down%20the%20sides%20and%20bottom%20of%20the%20bowl%20between%20each%20addition,%20and%20then%20the%20vanilla.%20Gently%20mix%20in%20the%20almond%20milk/vinegar%20mixture%20Stir%20in%20the%20dry%20ingredients%20and%20fold%20in%20the%20peach%20chunks.%3C/p%3E%3Cp%3EDivide%20the%20batter%20evenly%20among%20the%20prepared%20cupcake%20liners.%20Bake%20for%2018%20to%2022%20minutes,%20or%20until%20a%20tester%20inserted%20into%20the%20center%20of%20cupcakes%20comes%20out%20clean.%20Cool%20the%20cupcakes%20for%20five%20minutes%20in%20the%20tin,%20then%20turn%20them%20out%20onto%20a%20wire%20rack%20to%20cool%20completely.%3C/p%3E%3Cp%3EGoat%20Milk%20Buttercream%3C/p%3E%3Cp%3E1/2%20lb%20goat%20butter%3C/p%3E%3Cp%3E4%20cups%20powdered%20sugar%3C/p%3E%3Cp%3EBeat%20goat%20butter%20until%20fluffy.%20%20Slowly%20beat%20in%20powdered%20sugar%20a%20few%20tablespoons%20at%20a%20time.%20You%20may%20add%20some%20vanilla%20extract%20but%20you%20will%20lose%20the%20pure%20color%20coloring%20and%20honestly,%20this%20buttercream%20doesn't%20need%20it.%20It%20tastes%20like%20goat%20cheese!%3C/p%3E){kind=link}
