Ingredients

  • 1 (12 oz) bag frozen unsweetened raspberries, thawed
  • 1/4 cup granulated no-calorie sweetener
  • 1 tbsp cornstarch
  • 1 (16 oz) bag frozen unsweetened sliced peaches
  • 1 (8 oz) container plain yogurt
  • 1/4 cup reduced fat milk or peach nectar
  • 1/4 cup granulated no-calorie sweetener
  • 1/4 tsp almond extract
  • 1 cup ice cubes

Directions

  1. Process raspberries in a food processor or blender. Pour mixture through a fine wire-mesh strainer, discarding seeds and pulp.
  2. Combine 1/4 cup sweetener and cornstarch in a small saucepan; stir in raspberry puree. Bring to a boil over medium heat, stirring constantly; boil, stirring constantly, 1 minute. Chill.
  3. Process peaches, yogurt, milk, the remaining 1/4 cup sweetener, almond extract, and ice cubes in a blender until smooth, stopping to scrape down sides. Pour 8 oz into each of the 5 glasses. Top with remaining raspberry sauce. Garnish, if desired. Serve immediately.
