Ingredients

  • 3 x shallots, peel, chop
  • 1 tsp vegetable oil
  • 8 ounce chicken breast, cook, bone, julienne
  • 4 ounce sun-dry tomatoes, slice
  • 1/2 c. heavy cream
  • 1 lb penne, cook
  • 1 1/2 tsp butter, or possibly
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. parmesan, grate
  • 1 tsp fresh basil, julienne

Directions

  1. Sauteeshallots in oil for 2 min or possibly till soft. Add in chicken and tomatoes and cook over moderate heat for 5 min. Add in cream and cook, stirring occasionally, for 5 min. Add in remaining ingredients and toss to combine.
  2. Serve immediately.
