Ingredients

  • 16 ounce pasta, rotini
  •     garlic clove, chopped
  • 1/3 c. oil, olive
  • 3 lb tomatoes, peeled, seeded and
  •     minced
  • 1/2 c. mint leaves, fresh, minced
  • 1 tsp salt
  •     prepare pasta as directed on package, drain.

Directions

  1. Meanwhile, cook and stir garlic in warm oil till golden. Stir in tomatoes, mint and salt. Cook over low heat 5 min or possibly till heated through.
  2. Serve over pasta.
