Directions

  1. Bring large pot of water to a boil. Add in 1 Tbsp. salt and spinach. Cook 1 minute. Using slotted spoon, remove spinach (reserve water for pasta) and transfer to bowl of cool water. Drain and squeeze dry. Chop coarsely.
  2. Bring spinach water back to a boil. Meanwhile, in food processor fitted with steel blade, mince garlic if using. Add in cottage cheese and blend till fairly smooth. Add in cooked spinach and lowfat milk and blend till smooth. Add in nutmeg and salt and pepper to taste. Transfer to shallow serving bowl. Add in pasta to boiling water, stirring to prevent sticking. Cook till just tender, about 10 min. Drain well.
  3. Add in pasta to bowl with spinach sauce and toss to coat. Sprinkle with Parmesan and toss again. Serve warm.
  4. This recipe yields 6 servings.
