- 400g short pasta such as tubetti (I used De Cecco mezzi tubetti no. 63)
- 500g potatoes, peeled and diced
- 1/2 onion, chopped
- 1 celery stalk, diced
- 1 carrot, peeled and diced
- 1/4 cup olive oil
- 100g tomato purée (or use 2 to 3 tablespoons Italian concentrated tomato paste)
