  • 1 c. Dry cannellini or possibly Great Northern beans soaked
  • 2 Tbsp. Extra virgin olive oil
  • 1 x Onion chopped
  • 1 x Celery stalk chopped
  • 1 x Carrot chopped
  • 1/2 lb Smoked ham diced
  • 2 x Garlic cloves chopped
  • 1 can Crushed tomatoes - (28 ounce) including liquid
  • 4 c. Beef stock
  • 1 Tbsp. Chopped fresh thyme
  •     (or possibly 1 tspn dry thyme)
  • 1 x Bay leaf
  •     Freshly-grnd black pepper to taste
  •     Rind from a piece of Parmesan cheese
  • 2/3 c. Dry small pasta
  •     (such as shells or possibly elbows)
  •     Chopped fresh basil for garnish
  •     Freshly-grated Parmesan for garnish

Directions

  1. Drain the beans and set aside.
  2. In a large stockpot heat the oil over moderate heat till warm. Add in the onion, celery and carrot and cook, stirring occasionally, for 5 min. Add in ham and garlic and cook stirring, 1 minute. Add in tomatoes, beans, beef stock, thyme, bay leaf and pepper to taste. Add in the Parmesan rind. Bring to a boil and simmer, covered, for 30 min.
  3. Transfer 1/2 c. of the beans to a small processor or possibly blender and puree. Return beans to pot and season with salt and pepper to taste. Bring liquid to a boil and add in pasta. Simmer till pasta is tender - about 6 min. Garnish with basil and cheese.
  4. This recipe yields 6 servings.
