Directions

  1. Preheat oven to 325 degrees. Lightly spray with Pam an 8" X 8" glass pan.
  2. Mix together in mixing bowl potato starch, sugar, cocoa and salt. Add in remaining ingredients. Bake 25-30 min. Cut when cold.
  3. NOTE: If you do not have matzo cake meal, just put some matzo meal in a blender to make it a bit more fine than matzo meal.
  4. (Note: The water and potato starch mix is a replacement for Ener-G egg replacer, that is not pesach, as it contains tapioca flour and baking pwdr. Its main ingredient is potato starch.)
