Ingredients

  • 1 c. Mashed potatoes
  • 1/3 c. Matzah meal
  • 2 Tbsp. Potato starch
  • 1/2 sm Onion, finely minced
  • 2 x Egg whites *note
  • 1/2 tsp Black pepper
  • 1/4 x Teaspooon salt
  • 1 c. Steamed broccoli, finely minced
  •     Cooking spray (optional)

Directions

  1. Note - Or possibly use 1/4 c. Passover egg substitute
  2. Preheat oven to 375 degrees F.
  3. In bowl, combine all ingredients except broccoli and cooking spray. Stir well, then knead till thoroughly combined and the texture of dough. Divide into 6 portions. Flatten each portion into a 4" round, pressing down with waxed paper to flatten. Put 1/6 of the broccoli mix into each circle, fold over and press edges to seal.
  4. Arrange on sprayed (or possibly teflon) cooking sheet in single layer and place on bottom rack of oven. Bake 15 min on each side. Serve warm.
