Parmesan-crusted oven fried chicken

Parmesan-Crusted Oven-Fried Chicken tastes great hot or cold, takes minutes to prep, and “fries” to a delicious golden-brown right in your oven.

Ingredients

  • ½ cup dry bread crumbs
  • 1 cup grated Parmesan cheese
  • ½ tsp. paprika
  • ¼ tsp. ground black pepper
  • 2 eggs, lightly beaten
  • 1 tbsp. water
  • 3 lbs. boneless, skinless chicken breast halves (about 6 medium-to-small)

Directions

  1. Heat oven to 350 degrees. Cover a 15x10x1 baking sheet with foil. Spray foil with nonstick cooking spray.
  2. In a large bowl, combine bread crumbs, Parmesan cheese, paprika and black pepper; mix well.
  3. In a small bowl, whisk together eggs and water. Dip chicken pieces into egg mixture, and then roll in bread crumb mixture.
  4. Put chicken pieces on prepared baking sheet about 2 inches apart.
  5. Bake at 350 degrees for 45 minutes to 1 hour, or until meat is no longer pink and juices run clear. To serve cold, let chicken cool slightly, cover loosely with foil and refrigerate until well chilled. Transfer to storage container.
