Ingredients

  • 1 Tbsp. butter
  • 1 med onion, finely minced
  • 6 lrg potatoes, peeled and diced
  •     Water
  • 2 x to 3 c. lowfat milk
  • 2 Tbsp. butter

Directions

  1. Salt and pepper to taste. Saute/fry the onions in the 1 Tbsp. butter in a medium saucepan over medium-high heat till softened. Add in potatoes and just sufficient water to cook, about 1 c.. Season lightly with salt. Bring to a boil; cover and reduce heat to low. Simmer till potatoes are tender, about 15 min. Add in the lowfat milk, remaining butter, salt and pepper to taste. Continue to cook over medium heat till warm; don't boil. With a potato masher, mash some of the potatoes right in the pot to slightly thicken the soup.
