Ingredients

  • 1 lb Imitation crab, minced into bite-sized pcs
  • 1 x Ripe papaya
  • 1 x Red bell pepper
  • 1 x Cucumber, split lengthwise and sliced into half circles
  • 2 x Scallions, thinly sliced
  • 3 c. Fresh spinach, thoroughly washed, stems removed and torn into bite-sized pcs
  • 1/2 c. Pine nuts, toasted at 350 degrees till golden brown, about 15 min
  • 2 x Limes, Juice of, strained
  • 1 tsp Lemon soy sauce (but any soy sauce will do)
  • 4 Tbsp. Corn oil
  • 2 tsp Freshly grated ginger
  • 1/4 tsp Freshly grnd black pepper.

Directions

  1. Peel and seed the papaya. Cut it into 1/2-inch cubes. Seed the bell pepper, remove the ribs, and cut the pepper into 1/2" cubes. In a small mixing bowl, combine all of the dressing ingredients and whisk. Place all of the salad ingredients in a large mixing bowl and pour the dressing over them just before serving. Toss to combine.
  2. Yield: Made 8 servings.
  3. Note: This tastes great the first day, but does not hold well.
