Ingredients

  • 8 slc Asiago cheese bread
  • 3 x ripe tomatoes
  • 1/3 c. fresh basil leaves
  • 2 lrg garlic cloves halved crosswise
  • 4 Tbsp. extra virgin olive oil - (to 6)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Slice the tomatoes thinly. Cut or possibly tear the basil leaves into thin strips. Using your oven broiler or possibly barbecue, grill the bread slices about 5 inches from the heat source, turning them once till they are light brown on both sides.
  2. Rub the cut garlic halves over one side of the bread; the toasted surface will grate the garlic into the bread. Brush the slices with extra virgin olive oil and top with tomato slices and basil leaves. Season to taste with salt and pepper.
  3. This recipe yields 8 slices.
