I have been a vegetarian for this last two weeks and wanted to cook something healthy and wholesome. I wanted it to be a simple one-pot vegetable curry and is surprisingly easy and quick to make.
Ingredients
- 1 tsp cumin seeds
- 1 onion - chopped
- 1 tomato - chopped
- 2 inch ginger - finely chopped
- 1/2 green capsicum - sliced long and thick
- 1 cup frozen mix vegetables - thawed
- 1 cup cubed paneer - thawed
- 2 tsp chili powder
- 1/2 tsp turmeric powder
- 2 tsp garam masala
- Salt and sugar to taste
- Milk (optional)
- Coriander leaves
Directions
- Heat oil and fry the cumin seeds and ginger until light brown. Then add the onion and fry until translucent.
- Add in the tomatoes, some coriander leaves and stir for a minute. Now slightly fry the capsicum followed by the spices. Make sure the raw smell is gone then add some water for gravy.
- Add salt and sugar to taste and give it a mix before adding the vegetables and paneer.
- Once the vegetables and paneer is cooked, add some milk to give it a thick gravy consistency.
- Garnish with the remaining coriander leaves and serve hot with rice and pickle or chapatis.
