%20and%20assemble%20on%20a%20skewer%20with%20strawberries,%20blackberries%20or%20any%20fruit%20or%20berry%20of%20your%20choice.%20Top%20with%20an%20easy%20recipe%20for%20homemade%20butter%20pecan%20syrup%20(%20recipe%20follows)%20and%20enjoy.%3C/p%3E%3Cp%3EMichelle'%20Tasty%20Creations%20is%20my%20partner%20this%20month%20for%20this%20month's%20Surprise%20Recipe%20Swap.%20As%20a%20participant,%20%20I%20was%20secretly%20assigned%20to%20go%20through%20Michelle's%20blog,%20select%20a%20recipe%20to%20make,%20and%20not%20post%20it%20until%20today,%20which%20is%20the%20day%20all%20the%20participants%20reveal%20their%20recipes.%20All%20the%20recipes%20can%20be%20viewed%20at%20the%20roundup%3C/p%3E%3Cp%3EI%20was%20so%20glad%20to%20be%20introduced%20to%20Michelle's%20blog.%20She%20has%20a%20ton%20of%20fabulous%20recipes,%20and%20they%20are%20so%20well%20organized%20that%20everything%20is%20so%20easy%20to%20find.%3C/p%3E%3Cp%3EI%20had%20a%20ball%20going%20through%20her%20recipes.They%20all%20looked%20so%20good!%20%20I%20was%20very%20tempted%20to%20try%20many%20of%20her%20recipes%20including%20my%20favorites%20for%20Old%20Fashioned%20Potato%20Salad%20,%20her%20recipe%20for%20Old%20Fashioned%20Cinnamon%20Vanilla%20Rice%20Pudding,%20her%20Sweet%20Cherry%20Smoothie,%20%20and%20%20her%20real%20food%20Broccoli%20Cheddar%20Soup,(%20which%20were%20all%20easy%20to%20make%20gluten%20free)%20,%20but%20%20I%20kept%20coming%20back%20to%20these%20mini%20pancake%20and%20fruit%20kabobs.%20I%20have%20grandchildren,%20and%20I%20thought%20they%20would%20love%20them%20!%3C/p%3E%3Cp%3EMichelle's%20recipe%20for%20pancakes%20easily%20adapted%20to%20gluten%20free%20by%20just%20changing%20the%20flour%20which%20I%20changed%20to%20oat%20flour%20which%20I%20made%20myself%20in%20the%20Vitamix.%20I%20simply%20put%20gluten%20free%20oats%20(%20I%20get%20them%20at%20Trader%20Joe's)%20%20in%20the%20Vitamix%20and%20whizzed%202-3%20times.%20It%20instantly%20turned%20into%20flour.%3C/p%3E%3Cp%3EMichelle%20also%20had%20a%20recipe%20for%20a%20butter%20pecan%20syrup%20that%20did%20not%20need%20any%20adjusting%20since%20all%20the%20ingredients%20were%20already%20gluten%20free.%3C/p%3E%3Cp%3EI%20made%20the%20syrup%20first,%20then%20the%20pancakes%20and%20then%20assembled.It%20was%20easy%20to%20do%20and%20looked%20super!!%20The%20butter%20pecan%20syrup%20was%20outstanding%20and%20complemented%20the%20fresh%20fruit.%20I%20didn't%20have%20any%20strawberries%20,%20so%20I%20used%20the%20fresh%20blackberries%20and%20opened%20a%20bag%20of%20frozen%20berries%20from%20Trader%20Joe's%20.%3C/p%3E%3Cp%3EThis%20is%20my%20favorite%20frozen%20fruit.%20It%20has%20big%20plump%20cherries%20in%20it%20(%20Trader%20Joe's)%3C/p%3E%3Cp%3EIt%20would%20have%20been%20more%20colorful%20with%20the%20strawberries-%20next%20time%20I'll%20use%20them%20too.%20%20It%20was%20really%20%20a%20delicious%20breakfast.%3C/p%3E%3Cp%3Epancakes%20with%20pecan%20syrupWithout%20syrup%3C/p%3E%3Cp%3EI%20will%20definitely%20be%20a%20regular%20visitor%20to%20Michelle's%20blog,%20and%20I%20know%20I%20will%20be%20trying%20lots%20of%20her%20recipes.%20The%20Broccoli%20Cheddar%20Soup%20is%20next%20on%20my%20list%20to%20try.%3C/p%3E%3Cp%3EThis%20Surprise%20Recipe%20Swap%20is%20being%20hosted%20by%20Jutta%20at%20Hungry%20Little%20Girl.%3C/p%3E%3Cp%3EHere's%20what%20you%20need%20for%20the%20Pancake%20Kabobs:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EMix%20the%20oat%20flour,%20baking%20powder,%20%20in%20a%20bowl%20and%20set%20aside.%20In%20another%20bowl,%20mix%20the%20wet%20ingredients%20and%20add%20to%20the%20dry.%20Use%20a%201/4%20cup%20measuring%20cup%20to%20ladle%20out%20the%20batter%20for%20each%20%20mini%20pancake%20onto%20a%20greased%20electric%20fry%20pan%20.%20Allow%20the%20little%20bubble%20to%20form%20and%20pop%20and%20then%20flip.%20Cook%20a%20few%20more%20minutes%20on%20the%20other%20side%20until%20done.%20Makes%20about%2030%20silver%20dollar%20pancakes.%20Assemble%20onto%20skewers%20starting%20with%20a%20pancake,%20a%20peice%20of%20fruit,%20and%20then%20a%20pancake%20and%20peice%20of%20fruit.%20My%20skewers%20were%20short,%20but%20you%20could%20find%20longers%20skewers%20for%20a%20longer%20kabob.%3C/p%3E%3Cp%3EHomemade%20Butter%20Pecan%20Syrup:%3C/p%3E%3Cp%3E1%20cup%20maple%20syrup%20of%20your%20choice,%20I%20used%20Trader%20Joe's%20Organic%20Pure%20Maple%20Syrup%3C/p%3E%3Cp%3E2%20Tbs.%20butter%3C/p%3E%3Cp%3E1/2%20cup%20pecans,%20chopped%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EComine%20ingredients%20in%20a%20pot,%20bring%20to%20a%20boil%20and%20then%20simmer%20%20on%20very%20low%20heat%20to%20let%20the%20flavors%20mingle%20for%20about%205%20minutes.%3C/p%3E%3Cp%3EWant%20to%20find%20out%20how%20you%20can%20participate%20in%20the%20Surprise%20Recipe%20Swap?%20%20click%20on%20the%20badge%20below.%3C/p%3E%3Cp%3EThe%20Surprise%20Recipe%20Swap%20is%20hosted%20by%20Jutta%20at%20Hungry%20Little%20Girl%20where%20you%20can%20visit%20and%20see%20all%20the%20participant's%20recipe%20roundup.%3C/p%3E%3Cp%3EWill%20
